Please explain the etymology of "fly-by-night"?

In business or financial matters, 'fly-by-night' refers to businesses which set up operation, contract for jobs, get paid, and then do inferior work. It's not uncommon for these businesses to pack up and move on when people start catching on and begin to complain and demand their money back.
